Description

Cut from the shoulder, flat iron steaks are lean, but packed with marbling, making them superb for BBQ cooking. They’re never going to compare the tenderness of the top four, but they have a lovely flavour, and are good value.

Best served pink, and it’s essential to slice them across the grain.
